Zucchini & Pattypan Squash Filo Parcels with Honey & Thyme

Ingredients:

- 2 small zucchini, diced
- 3 pattypan squash, diced
- 1 brown onion, diced
- 3 cloves garlic, minced
- Handful of sage
- Handful of thyme
- 100g butter, melted
- 1 tsp dried chilli
- 1tsp wholegrain mustard
- 1 tsp sumac
- 12 sheets filo pastry
- honey to drizzle
- salt and pepper to taste

Method:

1. Preheat fanforced oven to 190deg C. Grease a muffin pan with melted butter
2. In a medium saucepan, using half the melted butter, sautee onion, garlic, sage until soft and translucent
3. Add zucchini, pattypan squash, mustard, dried chilli and sumac and sautee. Season.
4. Prepare filo pastry - lay 1 sheet of filo pastry on board. Brush with butter and place another sheet of pastry over. Cut in half, and fill two muffin tins with pastry. Repeat until all the muffin tins are filled.
5. Spoon zucchini & squash mixture onto pastries. Season top with salt & pepper. Brush exposed filo pastry with remaining butter
6. Bake in oven for 20min or until golden
7. Remove from oven, sprinkle with thyme leaves and drizzle hot pastries with honey
8. Serve & enjoy!
