Zucchini Lemon & Chives Pancakes with Miso & Shichimi Togarashi

Ingredients:
  • 2 Zucchini, grated
  • Zest & Juice of 1 Lemon
  • Handful of Chives, finely chopped
  • Handful of Parsley, finely chopped
  • Nasturtium Flowers to garnish
  • 4 cloves garlic, minced
  • 1 red onion, finely diced
  • 2 tsp Miso Paste
  • 1 tsp sugar
  • cracked pepper
  • 2 Eggs
  • 2 tsp sesame oil
  • 5 tbsp plain flour
  • 2 tsp togarashi
  • Olive oil for frying

Method:
  1. Fry onion and garlic with olive oil in pan
  2. Mix grated zucchini, parsley, chives, onion, garlic, sugar, miso paste, eggs, flour, lemon juice & zest, sesame oil & pepper in medium bowl.
  3. Heat oil in a medium frypan, and using a tablespoon, spoon mixture to form 3-4 small pancakes.
  4. Flip pancakes when bottom is able to slide on the pan, and is golden brown.
  5. Serve with sprinked togarashi and nasturtium flowers
