Spring Onion, Coriander & Sesame Pancakes

Ingredients:

Dough mix:

  • 280g plain all purpose flour
  • 180ml hot water
  • 1 tsp peanut oil
  • 1/2 tsp salt
  • Oil for rolling

Filling:

  • Mix of 1tbps sesame oil 3tbsp peanut oil in small bowl
  • 4 tbsp plain all purpose flour
  • 1/2 tsp salt
  • 1 cup finely chopped spring onion
  • 1/2 cup chopped coriander leaves
  • Dried chilli flakes and toasted sesame seeds to garnish
Method:
  1. Make dough: Dissolve the salt in the hot water and then add flour and oil. Knead until elastic using your hands or a dough hook if using an electric mixer. Place in a bowl and cover and allow to rest for 2 hours.
  2. Mix the filling oil (sesame and peanut oil) with flour and salt. Mix the shallots and coriander in another bowl.
  3. Divide the dough into six equal portions.
  4. Oil a clean surface and roll out into a rectangle. Brush with the sesame oil mix all over and then sprinkle with shallot mix. Roll lengthways until you get a snake shape and shape into a circle. Flatten out with your hands- don't worry if the dough breaks a little!
  5. Heat oil in a large frying pan on medium high heat and fry until golden brown on each side. Enjoy!
