Mix of 1tbps sesame oil 3tbsp peanut oil in small bowl
4 tbsp plain all purpose flour
1/2 tsp salt
1 cup finely chopped spring onion
1/2 cup chopped coriander leaves
Dried chilli flakes and toasted sesame seeds to garnish
Method:
Make dough: Dissolve the salt in the hot water and then add flour and oil. Knead until elastic using your hands or a dough hook if using an electric mixer. Place in a bowl and cover and allow to rest for 2 hours.
Mix the filling oil (sesame and peanut oil) with flour and salt. Mix the shallots and coriander in another bowl.
Divide the dough into six equal portions.
Oil a clean surface and roll out into a rectangle. Brush with the sesame oil mix all over and then sprinkle with shallot mix. Roll lengthways until you get a snake shape and shape into a circle. Flatten out with your hands- don't worry if the dough breaks a little!
Heat oil in a large frying pan on medium high heat and fry until golden brown on each side. Enjoy!
