Lemon, Parsley & Chives Sausage Rolls with Crispy Fried Sage

  • 500g Chicken Sausages (can be substituted with vegan mince)
  • 1 medium red onion (diced)
  • Zest of 1 lemon
  • 1 tsp fennel seeds
  • 1 tsp smoked paprika
  • 2 tsp cajun spice
  • 1 tsp sugar
  • Ground pepper to taste
  • 2 tsp Chilli Flakes (optional)
  • sesame seeds for topping
  • 1 egg (seperate white and yolk)
  • 2 sheets puff pastry (make your own if you're feeling adventurous)
  • Handful of chives, finely chopped
  • Handful of Sage, finely chop stems, set aside leaves
  • Handful of Parsley, finely chopped
  • Olive oil for frying

  1. Preheat oven to 190°C fan forced
  2. In a medium saucepan, fry onion, fennel seeds, paprika, cajun spice & chilli flakes until soft and fragrant
  3. Remove off heat and mix sausage, sugar, pepper, egg white, lemon zest, sage stems, parsley and chives.
  4. Divide and spread mixture across one edge of the puff pastry sheets. Roll puff pastry and filling into a log shape.
  5. Score pastry and brush with egg yolk. Top with sesame seeds
  6. Bake in oven for 40min or until pastry is golden, puffed, and filling is cooked
  7. Fry sage leaves in hot oil until crispy
  8. Garnish the sausage rolls with crispy sage and serve. Enjoy!
