Blueberry Sourdough Pancakes

Ingredients:

- 2 cups strong bread flour (or all purpose plain flour)
- 1 cup sourdough starter (ours uses wholemeal flour)
- 2 cups milk
- 2 tbsp sugar
- 2 large eggs
- 1/4 cup vegetable oil or melted butter
- 3/4 teaspoon salt
- 2 tsp vanilla extract
- 1 tsp bicarb soda (or baking soda)
- 2 cups blueberries

Method:

1. Whisk sourdough starter, eggs, milk, oil, vanilla and salt and sugar in a large bowl
2. Add bread flour to mix and whisk till combined
3. Add bicarb soda and stir gently till combined and mix becomes light and billowy
4. Heat a large frypan with oil and add approx 1/2 cup of mixture to make one large pancake. Top with blueberries
5. Flip pancake when bubbles appear on the top surface. The flipped side will require less time on the heat. Remove from heat when cooked on both sides and golden brown
6. Repeat till pancake batter is used up
7. Enjoy
